Poached Pears

(Serves 4)

4 large ripe firm pears (Bosc, Bartlett, D'Anjou)
1 cup apple juice
1 cup water
2 cinnamon sticks
1 vanilla bean
2 t cinnamon

Directions:
  1. Peel and core pears (use a spoon or melon baller –) from the bottom, leaving stems intact. Cut a thin slice off the bottom of each pear to provide a flat, even bottom. Set aside.
  2. Combine remaining ingredients in saucepan. Bring mixture to a boil. Add pears and arrange standing with stems pointing up. Reduce heat and simmer, covered, 20 to 30 minutes or until pears are tender.
  3. Remove pears from saucepan. Continue to cook liquid until reduced to 3/4 cup, about 15 minutes. Remove vanilla bean and cinnamon sticks from sauce. Serve pears drizzled with sauce.
