Quinoa Pilaf

(Serves 4)

1 recipe steamed quinoa (see below, cooked with broth)
4 scallions, thinly sliced
1 leek, thinly sliced

Sauté scallions and leeks in olive oil a few minutes – and sauté until slightly scallions translucent.

Add steamed quinoa, salt, pepper and seasonings of your choice and gently sauté and stir until all combined. You can also experiment with adding other veggies.

Steamed Quinoa
1 cup dry quinoa, rinsed and drained
2 cups water (or broth)
Pinch of salt
  1. In a saucepan bring the water, quinoa and salt to a rolling boil.
  2. Cover and reduce to a very low simmer. Cook for 15 minutes.
  3. Remove from the heat. Leave it covered and let it sit for 5 more minutes. In this time it will fluff up.
