Monthly Recipe

Crunchy Vegetable Slaw (Serves 4)

Ingredients:

5 stalks of bok choy , thinly sliced

1/2 a small red onion, thinly sliced

1 cucumber, thinly sliced

1/2 cup of alfalfa sprouts (optional)

Dressing:

1 teaspoon ground coriander

1 teaspoon dijon mustard

2 Tablespoon apple cider vinegar (or lemon juice)

1/4 cup olive oil

2 teaspoon honey or brown rice syrup

Salt and black pepper to taste

Directions:

1. In a bowl combine all ingredients.

Either eat immediately or chill for up to one hour.

Juice Fasting By Brenda Jaeck

Juice Fasting is a way to cleanse and rejuvenate the body. Fasting allows your digestive system to rest and more energy can then be used to help the body eliminate built up toxins. Toxins build up in the body as a result of a fast-paced life; one that includes over-eating, poor food choices, environmental pollution and stress. Fasting can also be used as a way to transition a healthier eating plan and more mindful eating habits.

Juice fasting has been shown to be beneficial in healing from many diseases. Some of the diseases that can be helped by fasting include skin disorders, digestive problems, asthma, Halitosis (bad breath) and many others.

Other benefits gained by fasting include mental clarity and overall awareness as well as more energy. Weight loss is sometimes an added benefit of fasting but should not be the sole purpose of a fast as you will likely gain back most of the loss once “regular” eating has been resumed. Fasting should not be used as a “cure all” – meaning an excuse to eat an unhealthy diet because you are going to fast in the future. This seesaw affect is VERY hard on your body.

Juice fasting (as opposed to water fasting) provides nutrients – vitamins, mineral and calories. Therefore the body is not starving but rather allowing the digestive system to rest.

Variety is the spice of life as well as an important ingredient in a juice fast. Creating a variety of juice combinations assists in the process as does adding various spices and/or herbs to the juices.

It is important to take time for self care while on a fast. This should include relaxing activities such as yoga, massage or other spa treatments. Colonics during the fast can increase the amount of intestinal residue eliminated.

Reducing (or eliminating if possible) caffeine, sugar and other processed for a few days before fasting will allow for an easier transition. Transitioning slowly back to eating solid food is also important to allow your body to adjust. This should be done with fruit, steamed vegetables, broth and salad if you wish – all with no dressing or any other processed products.

Maintaining a regular fasting schedule, such as once a quarter or one-day a month helps keep build up under control and makes each fast less stressful. Now is a great time for a juice fast as warmer weather months are easier on the system than colder weather months.

Through my counseling services I help people create and maintain balance in their life by using nutrition as a focus and a tool. To do this I look at the entire lifestyle of an individual to achieve maximum health. This is accomplished through education and private consultations where an individualized program is developed for each client. These consultations include evaluating the client’s current diet and overall lifestyle and then making easily implemented, gradual changes. Additionally, they receive outside information in the form of articles, books, tapes and recipes. Also included are additional monthly forms of education and participation -- activities like cooking coaching, health food store shopping hints, light exercising functions and other activities. My practice is telephone based, allowing for maximum flexibility and ease.
