Personal Notes:  Greetings – I am a great observer of people – I love to watch them do all sorts of activities.  Most notably I like to observe people’s relationship to food – food (and the consuming of it) is every where in our society.  Some of my latest observations inspired the article below.  I hope all is well with you and that you are enjoying the spring/

Nutrition Tip

Step out of your food box  Experiment with a food you’ve never had, think you hate or have not had in years.  Tofu would be a good one – as for many it falls into one of these categories.  See the recipe below.

Featured Recipe

Millet Scrambled Tofu

 

2 blocks tofu, squeezed and crumbled         

2 T olive oil

1 red onion, chopped 

1 / 2 red bell pepper, chopped                                               

1 / 8  t paprika                                                

 1 / 2  t tamari soy sauce

1 / 4  t turmeric                                   

dash black pepper

 

Heat oil.  Add onion and red pepper, sauté slightly.  Add Tofu, paprika, tamari, turmeric and black pepper - sauté lightly until ingredients are blended and warm

 

Variations:  Experiment with different spices and veggies (I really like mushrooms added to this).  Enjoy J

What You Eat is a Reflection on You.

You’ve heard the expression – “You are what you eat.”  What does your food say about you?  Here are some examples and some possible interpretations.


Fast Food  Hum, you must be pretty important – you don’t even have time to eat!  NOT.  Who is REALLY that busy – that they don’t have time to eat?  We all set our priorities.  What are yours?

 

Cheap Food  The word cheap says it all.  Do you value your health?  I always say “You can pay now or your can pay later.”  Think about how much cheaper (for those of you who have this as a mantra) it is to keep your health now than it is to repair your health a later date.  It might take years for you to see the affects of cheap food on your health but you WILL pay.  You’ll pay in medical costs, drug costs and missed wages.  If you don’t think this is true –think about the diet of low income families.  This is a segment that is surviving (barely) on cheap food. They have much higher levels of obesity and diabetes than middle or upper income levels. 

 

Highly Processed Food  This food has limited nutrients and limited fiber.  The combination creates addict-like behavior.  Have you ever noticed - the more you eat, the more you need to eat?  Some how you are just never full.  That’s because highly processed foods contain calories but little nutrients.  Calories do not keep us full; they give us short term energy.  As you may have noticed this type of food “burns” right through you.

 

Always eating food prepared by someone else   I often hear from people who live alone “I would never cook for myself, it’s too much work.”  My goodness, if you would take the time to cook for someone else – why would you not do it for yourself?  Who could be more important than you?  If you do not take good care of you – how can you be available for others – to nourish and support them (in the case of children and/or a spouse) or how can you be available to be focused and present at work?  Cooking for yourself not only gives you more control over WHAT you are eating but it is also like a “Good housekeeping seal of approval” saying “Yes!  I am worth it”

 

These are just a few examples of different food types.  What does what you eat say about you?  Next you can think about HOW you eat.  What does IT say about you?  Here a few examples to ponder --- eating in your car, eating at your desk, always eating in route or while multitasking.  Lastly, how does the energy in the food you eat affect you?  For more thoughts to ponder on this topic listen to a podcast of my radio on the same topic.
