– A great spring veggie. It
reduces phlegm and mucus and eases constipation. It contains rutin which helps to keep small
blood vessels from rupturing, is used in the treatment of heart palpitations
and is a good antidote against x-rays and other forms of radiation. It contains good amounts of vitamins A,
B-complex, C and E as well as potassium and zinc.
Orange and Nut
Sautéed Asparagus Serves 4
hazelnut or macadamia nut oil
chopped, toasted hazelnuts or macadamia nuts (optional)
asparagus, and slightly steam in sauté pan with a little water until desired doneness
(I like them still a little crispy).
Drain. Return pan to heat and
drizzle with oil and stir until coated. Roll orange on counter and cut in
half, remove seeds. Squeeze both
halves of orange over asparagus and stir to coat. Sauté, stirring occasionally, until the
orange juice is caramelized and coats the asparagus. Can add salt and pepper and/or toasted
