 Greetings – Happy Earth Day.  Think about the progress that has been made in planet awareness since the beginning of this holiday celebration a few short decades ago. Earth day was created by the EPA in 1970.  We’ve come along way to creating awareness.  What will you do in 2009 to increase your own awareness?

Nutrition Tip

Asparagus – A great spring veggie.  It reduces phlegm and mucus and eases constipation.  It contains rutin which helps to keep small blood vessels from rupturing, is used in the treatment of heart palpitations and is a good antidote against x-rays and other forms of radiation.  It contains good amounts of vitamins A, B-complex, C and E as well as potassium and zinc.

Featured Recipe

Orange and Nut Sautéed Asparagus Serves 4

 

1 bunch asparagus

2 t hazelnut or macadamia nut oil

1 orange

1 T chopped, toasted hazelnuts or macadamia nuts (optional)

 

Clean asparagus, and slightly steam in sauté pan with a little water until desired doneness (I like them still a little crispy).  Drain.  Return pan to heat and drizzle with oil and stir until coated. Roll orange on counter and cut in half, remove seeds.  Squeeze both halves of orange over asparagus and stir to coat.  Sauté, stirring occasionally, until the orange juice is caramelized and coats the asparagus.  Can add salt and pepper and/or toasted chopped nuts to taste. Note” using a juicer, a reamer,  or even a fork helps draw more juice out of the orange.

How do your food choices affect ….

Do you often feel overwhelmed and like you can’t make a dent to create change for yourself, the planet or animal kind?  The truth is we ALL make choices that affect each of these areas everyday.  Every time we eat – we make a choice.  Here is some “food for thought.”

 

Organic food

            Eating organic food can have the following affects:

                        Is a healthier choice for you personally

-          the food has less toxins that need to be eliminated

-          tastes better and therefore makes the food more enjoyable as such, you are more likely to eat your veggies J

Is less harmful to the planet

-          no foreign chemicals are entering the ground and water supply

-          creates better farming practices that do not deplete the earth

Eating locally

            How does this choice REALLY affect anything?

It IS better for the planet – it is not wasting energy to deliver food halfway around the world.  (Barbara Kingsolver in her book Animal, Vegetable, Miracle states that it takes 87 calories to deliver 1 calorie of fruit from California to New York)

                       

Supports the local economy and independent farmers as opposed to large corporate conglomerates

                       

Allows us to better enjoy food as it tastes better and we are only enjoying food when it is in season and picked when it was ripe.   Eating food only in season also allows us to better appreciate it.

 

Eating vegetarian

Better morally – most feed lot animals never see the light of day and live in impossible and inhuman conditions

                       

Better for the planet as it is a better use of resources.  For example, in John Robins book Diet for a New America he states it takes 50 pounds of grain to create 1 pound of feed lot beef.  Think about how many people could be fed with 50 pounds of grain, as opposed to 1 pound of beef.  The cattle industry is also the largest consumer of water in the US, uses an exorbitant amount of fuel and creates a large amount of waste.

 

                        Healthier
