Personal Notes:
 Greetings. Happy New Year.  This is a wonderful time for self reflection.  I have been doing a lot of it myself.  I find that meditation and journaling help facilitate this process.

Nutrition Tip

Featured Recipe

Roasted Butternut Squash and Tomato Soup

 

The inspiration for this came from a class I recently attended at Whole Foods.

 

1 large butternut squash

6 medium tomatoes (or 1 lb can whole tomatoes)

4 1 / 4 cup vegetable stock (omit if using canned tomatoes)

4 cloves garlic

2 T balsamic vinegar

2 sprig fresh rosemary

2 sun dried tomatoes

 

4 1 / 4 cup vegetable stock

1 leek, sliced

2 carrot peeled and diced

2 celery ribs, diced

2 T fresh thyme leaves

I can chickpeas, drained and rinsed pureed with a little veg. stock

Juice of 2 oranges

Salt and pepper

 

Rinse the butternut squash and slice in half.  Soup out seeds, brush cut side with olive oil and place cut side down on a baking dish.  Roast for 35 minutes at 375 or until tender.   Meanwhile, halve the tomatoes and place in backing dish with garlic, 1 cup vegetable stock, vinegar, rosemary and sun dried tomatoes.  Roast for 30 minutes.

 

Heat 2 T vegetable stock in Dutch oven or soup pot.  Add leeks and cook until translucent; then add carrots, celery and cook, stirring occasionally, until all veggies are soft.  You may need to add a bit of veggie stock.

 

Scoop out squash flesh and add it to the soup pan with the remaining 3 cups of vegetable stock and pureed chick peas.  Simmer, uncovered, for 20 minutes.   Add remaining ingredients (including roasted tomatoes (remove rosemary sprig first).  Using an immersion blender, food processor or high speed blender puree the soup.  Adjust seasonings.

Change – The beginning of the year is the perfect time for change.  While on a yoga retreat last fall I heard this song in a class and it literally brought me to tears.  Of course, part of it was thinking of the loss of Michael Jackson – but the WORDS – struck home.  Change NEEDS to start with you.  How will you affect change for yourself in 2010?

Through my counseling services I can help you create and maintain balance in your life by using nutrition as a focus and a tool.  To do this I look at your entire lifestyle to achieve maximum health.  This is accomplished through education and private consultations where an individualized program is developed for you.  These consultations include evaluating your current diet and overall lifestyle and then making easily implemented, gradual changes.  Additionally, you’ll receive outside information in the form of articles, books, tapes and recipes.  Also included are additional monthly forms of education and participation -- activities like cooking coaching, health food store shopping hints, light exercising functions and other activities. My practice is telephone based, allowing for maximum flexibility and ease.
