September 2010

Personal Notes:
Greetings.  This is proving to be an interesting month – it is all about movement and connecting.  The movement is about traveling – shuffling between NJ, TX, WI and UT.  Connecting is about making new friends and being in contact with so many long time friends – both electronically and via visits – through my travels and multiple sets of house guests in between.  It’s all good.  Even the enclosed article and recipe are about connecting.  See the notes included in each.

Nutrition Tip

Barley   A wonderful (one of my favorites). It’s chewy and substantial. I sometimes make instead of or in combined with rice. I particularly like it in colder months.  It is considered a strengthening grain.  And, can’t we all use more strength these days.    Specifically, it strengths the spleen-pancreas, the intestines and digestion.  It also stimulates appetite and is excellent in reducing pitta and kapha.

Featured Recipe

This is a great fall recipe and it’s a great people connecting recipe.  This was part of my Italian healthy cooking class- all the  participants would have to opportunity to “stir the pot”  This is a great dish to make with a group of people in the kitchen.

Barley Porcini Risotto  Serves 6

2 T olive oil

1 clove garlic

1 / 2 cup minced onion

1 / 4 cup diced celery

¼ pound porcini mushrooms, sliced

1 1 / 2 cup pearl barley

5 cups HOT vegetable or chicken broth

Sea salt, fresh ground pepper to taste

1 / 4 cup freshly grated Parmigiano Reggiano cheese (or use soy parm. Cheese)

2 T minced parsley

Heat the oil in a large heavy sauce pan over medium heat.   Add the onion and celery and sauté for 3 minutes; add the garlic and mushrooms and sauté for another 2 minutes.  Add the barley and stir to coat with oil/butter, sauté for 3 minutes.  Season with salt and pepper.  Lower the heat and add the stock 1 ¼ cup at a time, cooking and stirring frequently for about 15 minutes or until stock is absorbed.  If the stock is absorbed too quickly lower the heat.  After 1 hour all the stock should be absorbed and the barley cooked.  If not, raise the heat to boil off the stock.  Stir in cheese and parsley.  Taste and adjust seasoning, if necessary.  Serve hot garnished with parsley.

A friend that I have not heard from in a while recently emailed me the “chain” email below.  I rarely open these much less forward these.  I really like this one and seems to be related to my theme this month - connecting….

Lotus Touts

ONE .  Give people more than they expect and do it cheerfully .

TWO .  Marry a man/woman you love to talk to. As you get older, their conversational skills will be as important as any other.

THREE .  Don't believe all you hear, spend all you have or sleep all you want.

FOUR .  When you say, 'I love you,' mean it.

FIVE .  When you say, 'I'm sorry,' look the person in the eye.

SIX .  Be engaged at least six months before you get married.

SEVEN .  Believe in love at first sight.

EIGHT .  Never laugh at anyone's dreams. People who don't have dreams don't have much.

NINE .  Love deeply and passionately. You might get hurt but it's the only way to live life completely.

TEN . .  In disagreements, fight fairly. No name calling.

ELEVEN . Don't judge people by their relatives.

TWELVE .  Talk slowly but think quickly.

THIRTEEN! . . .  When someone asks you a question you don't want to answer, smile and ask, 'Why do you want to know?'

FOURTEEN .  Remember that great love and great achievements involve great risk.

FIFTEEN .  Say 'bless you' when you hear someone sneeze.

SIXTEEN . .  When you lose, don't lose the lesson.

SEVENTEEN .  Remember the three R's: Respect for self; Respect for others; and Responsibility for all your actions.

EIGHTEEN .  Don't let a little dispute injure a great friendship.

NINETEEN .  When you realize you've made a mistake, take immediate steps to correct it.

TWENTY . . Smile when picking up the phone. The caller will hear it in your voice.

Get to Balance –How will you bring more balance to your life?  How about a healthier, more balanced life plan?

Are your health concerns impeding you from living life fully? Do you want to change your relationship with food from the inside out? Are you seeking deep seeded balance and wellness?

I would eagerly welcome the opportunity to work with you on a personal level.  We can work together privately to create a customized life-long plan for you AND create the steps to incorporate those changes into your existing routines.

Through my counseling services I can help you create and maintain balance in your life by using nutrition as a focus and a tool.  To do this I look at your entire lifestyle to achieve maximum health.  This is accomplished through education and private consultations where an individualized program is developed for you.  These consultations include evaluating your current diet and overall lifestyle and then making easily implemented, gradual changes.  Additionally, you’ll receive outside information in the form of articles, books, tapes and recipes.  Also included are additional monthly forms of education and participation -- activities like cooking coaching, health food store shopping hints, light exercising functions and other activities. My practice is telephone based, allowing for maximum flexibility and ease.

There is also an email version of my program now available.
